Mushroom Ravioli

I am fond of Italian food. I know quite a few Italian dishes, all pasta dishes though. Thanks of course to the internet. We can now find recipes very easily. I want to make Mushroom Ravioli (err… the one Bella ordered on her “first date” with Edward Cullen at La Bella Italia). This recipe is using wonton wrapper (not the ravioli pasta) but this one should do, I guess, from www.grouprecipes.com

Ingredients:mushroom-ravioli

  • 8 oz button mushrooms
  • 1 tbsp butter
  • 1 medium-sized shallot
  • 1 small bunch of chives
  • 1 ½ tbsp salt
  • 4-6 oz skim ricotta cheese
  • 48 wonton wrappers
  • Water
  • Canola oil for pan frying
  • Directions:

  • In a food processor, add button mushrooms (cut in quarters), shallot, and chives and pulse until finely chopped.
  • Heat butter in a small saucepan.
  • Add mushroom mixture and salt, stirring occasionally until the mushrooms turn a light shade of brown and the shallot is translucent. Make sure it’s kind of salty – you’ll be adding ricotta to the ravioli, and if the mushroom mixture isn’t salty, your ravioli will be bland.
  • Spoon 1 tsp of the mushroom mix on the middle of a wonton, then top with 1 tsp ricotta cheese.
  • Moisten the edge of the wrapper with water, bring two opposite corners together and form a triangle. It’s better if you work from the middle of the wonton and push out – this will push out air pockets.
  • Repeat until all wontons are used.
  • Heat canola oil in a large pan (over med-high heat).
  • Add ravioli.
  • Flip the ravioli after about 90 seconds.
  • Cook for another 30 seconds and add about 2 tbsp of water to the pan. Turn heat down to medium.
  • Cover and cook for another 2-3 minutes.
  • Serve with marinara for dipping or with your favorite tomato or white sauce as you would boiled ravioli.

    Settling Well

    She’s really settling well in school. We struggled a bit when I came back from the Philippines because she didn’t want me to leave her in school alone. She wanted to be in school, but with the condition that I stayed with her. No such a good idea if I was to stay with her in the school. Good thing dear hubby and I came up with the idea. He send her to school without me towing around. It works better for her. She doesn’t hold on to her daddy as much as she does if it was me that sends her to school. I wish though that I could see what she does in school. I read in one of my friends’ blogs that they use camera in her kid’s school and that she can see everything her kid does in school. I wonder if they would install hidden spy camera in Q-Dees school so that parents will have idea what they do and what they learn in school. But that is wishful thinking.

    I used to take appetite suppressant before. That was like 12 years ago. It was really effective as I didn’t have any appetite at all to eat nor to drink. I was very successful in that sense. I lost weight like crazy, having 25 inch-waste line (don’t ask me what the size now though). I was very happy, being slim and all. I wish I can do the same thing now too. I know it’s impossible because you need to have a doctor’s prescription to have it.

    I used to get it from a farmacy that didn’t care about seeing doctor’s prescription. Hehehe. I couldn’t get it from any major pharmacies. So I’m quite sure I wouldn’t be able to get that now here either. So I’ll just wish.
